Palinurus elephas

Red lobster is a luxury product and one of the most popular shellfish.
It is expensive, due to its rarity. One of the most well-known products to be fished in the Mediterranean and, traditionally, in the Irish Sea, lobster stocks have grown significantly smaller. Following the implementation of various measures to manage stocks in the Atlantic (
including a ban on fishing from January to March and an increase in the legal policies), the population seems to be increasing in Brittany, which has led to high hopes for the future.

The red lobster is bought while still alive. The alertness of the animal should be checked: see if its tail curls under the body when it's lifted up. Once cooked, lobster flesh is a real delicacy.
