One of the sea’s main predators, bass is the ultimate luxury fish. There are two different kinds of European sea bass, found in the Atlantic and the Mediterranean.
With its lean, firm, pearly white flesh, this legendary fish is a classic, served at some of the world's finest restaurants. Although small bass usually tend to weigh between 1 and 2 kg, the biggest bass can weigh nearly 10 kg.
Bass is found on France's Atlantic coast, where it prefers rough, oxygenated waters, and is also found in estuary areas.
Line-caught bass is caught with lines, trolling lines and longlines. It is immediately bled and processed on board to preserve its quality flesh.
