A look at MAF finals 2018


With more than 200 candidates from across France taking part in the contest, some 27 candidates have made it to the final taking place at the CFA Médéric culinary school in Paris this Friday 21st September for their chance to be crowned “France’s Best Cold Food Apprentice Chef”. A real springboard into the industry for a new generation, this contest allows young aspiring chefs to show off their talents in this prestigious competition.

A menu of Saumon d’Isigny

For this year’s cold-dish prize, the jury, led by Jean-François Girardin, has concocted a menu based on saumon d’Isigny, provided by Procsea. The details of the menu are as follows:

  • Saumon d’Isigny cooked two ways, accompanied by a citrus fruit sauce, served with a mushroom garnish and a side of the chef’s choosing;
  • A moscovite rubanne (a traditional Russian dessert) served with a sauce or coulis.

Candidates will have four-and-a-half hours to put together their creations, before submitting their dishes to the jury to be judged.


A three-star jury

To mark the 33rd year of the MAF cold food awards, candidates will be judged by a three-star jury. Accompanying Jean-François Girardin (president of the Meilleurs Ouvriers de France and 1993 MOF winner) will be the following culinary stars:

  • Guillaume Gomez, head chef at the Elysée Palace;
  • Christophe Raoux, MOF Gastronomy prize winner 2015 and CEO of Peninsula Paris;
  • Jean-Marc Delacourt, MOF 1991 Gastronomy prize winner and co-creator of the contest.

In total, nearly thirty chefs have confirmed their attendance in helping judge the apprentices’ dishes for the final.

The final of the “France’s Best Cold Food Apprentice Chef” contest will take place on September 21st at the CFA Médéric.
